MINCE GROUND BEEF
This is Ray’s favorite. He can eat this everyday with white rice, black beans, a banana and never get tired of it. You can also add olives or fried potatoes.
Ingredients
2 pounds ground beef, at least 88% lean
2 tablespoons vegetable oil
1 yellow onion, diced
¼ slice green pepper, seedless
1 bay leaf
1 teaspoon kosher salt
3 garlic cloves
2 teaspoons oregano
1 teaspoon ground cumin
8 oz tomato sauce
¼ cup red cooking wine
¼ cup white cooking wine
¾ cup water
1 ½ teaspoons kosher salt
In a sauté pan, add 2 tablespoons of vegetable oil. Turn on to medium heat. When you start to see the ripples in the oil and it’s hot, add the onion, green pepper, and bay leaf. Add 1 teaspoon of salt and cook for 2 minutes.
Add garlic and cook for another minute. After, make a small space in the middle of the pan and add the oregano and the cumin. Toast the spices for 15 seconds, then mix everything together.
Add the ground beef. Flatten with the back of the spoon to break up the meat. Continue to cook on medium heat until all of the pink is gone and all of the ground beef is broken up.
You can drain the meat at this point if you have too much fat. Add tomato sauce, red wine, white wine, water, and salt. Lower to medium low. Cover and cook for 20 to 25 minutes.
